Healthy U Whole Wheat Saskatoon Muffins

Ingredients:

  • 500 ml or 2 cups whole wheat flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 375 ml or 1.5 cups saskatoons
  • 125 ml or 1/2 cup brown sugar
  • 75 ml or 1/4 cup canola oil
  • 190 ml or 3/4 cup skim milk
  • 2 egg whites
  • 2 ml or 1/2 tsp vanilla

    Preheat oven to 375 F.

    In bowl, mix flour, baking powder, salt and cinnamon. In separate bowl, combine egg whites, canola oil, skim milk and vanilla. Add brown sugar and stir until dissolved. Stir in saskatoons.

    Add liquid ingredients to dry ingredients and stir only until well moistened.

    Fill 12 greased or paper lined muffin tins.

    Bake at 375 F for 16 minutes or until evenly browned.
