Saskatoon Berry Freezer Jam

  • 750 mL crushed Saskatoon berries 3 c
  • 1.25 L sugar 5 c
  • 50 mL lemon juice 1/4 c
  • 1 pkg (57 g; 2 oz) powdered pectin crystals
  • 175 mL water 3/4 c

    Method:

    Wash berries. Sterilize jars or scald freezer containers. Thoroughly crush berries, one layer at a time. Measure 750 mL (3 c) berries into a large bowl. Stir in sugar, mix well and allow to stand 10 minutes. Mix water and pectin in a small saucepan; bring to a boil and boil 1 min, stirring constantly.

    Remove from heat and stir into fruit mixture. Continue to stir for 3 min. Pour into sanitized jars or scaled freezer containers. Leave 1 cm (1/2 inch) headspace. Cover at once with sanitized lids. Let stand at room temperature until set (up to 24 hours). Label and date.

    Store in freezer up to one year or in refrigerator up to 3 weeks. Yield: 1.5 L (6 cups)
