Salad with Honey Roasted Pears and Goat Cheese
Preheat oven to 375 F (190 C). Slice pear in half. Core with a melon baller. Halve each half to make quarters, then slice each quarter a few times to make a fan.
Place the pear slices on a parchment-lined baking sheet and season with salt and pepper. Drizzle with honey and roast in the oven until honey is caramellike.
Put greens in a bowl and sprinkle goat cheese and nuts onto the salads. Top with pear slices. Dress with a light vinaigrette.
Makes 2 servings.
