Medallions of Bison
with Saskatoon Berry Sauce
Ingredients:
  • 6 medallions of bison
  • salt and pepper for seasoning
  • flour to coat meat
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1/2 oz brandy
  • 1/3 cup Saskatoon Berry Puree
  • 2 tbsp demi-glace
  • 1/2 cup Saskatoon or Blueberries

Directions:
  1. Season medallions with salt and pepper (both sides)
  2. Flour lightly on one side
  3. Heat Sautéing pan over high heat
  4. Add vegetable oil and butter
  5. Place meat flour side down in pan
  6. Sauté medallions - each side for 3 minutes
  7. Remove meat from frying pan and keep warm on the side
  8. Add berries to the frying pan
  9. Sauté for 1 minute
  10. Deglaze pan with brandy
  11. Add Saskatoon Berry Puree and demi-glace
  12. Reduce slowly for 3-4 minutes
  13. Add medallions to the sauce
  14. Simmer lightly for 1 more minute
  15. Serve medallions - 3 to a plate
  16. Spoon sauce over the meat - lightly

Serves two.
